We purchased this lot from SYU・HA・RI's Tsujimoto-san. I was so curious about this Maracaturra*, and Tsujimoto-san is "the" guy to go to if you want Guatemala. He is such an inspiration to me and every time I meet him he is always so many steps ahead of me. He always has so many stories to share, beyond a simple "origin information", but a story full of all kinds of info about the region, producers, exporters and importers, and even some gossip here and there. You can tell his love for coffee just by listening to him talk. One of my personal goals is to roast and brew one great coffee that impress Tsujimoto-san, who has tasted various great coffees around the world. *Maracaturra is a hybrid of Maragogype and Caturra. 

How we roast this coffee

The temperature progression for this beans' roast is on the slower end, with a higher than standard starting temperature due to the high water contents. On the other hand it's important to keep the flame low and roast quickly as this is a low density beans and they roast very quickly after the crack. 9:53 up to 197c.
