Roaster's Comment

We are delighted to once again introduce Belarmino-san’s Pacas from Santa Barbara, Honduras—our fourth year carrying his coffee at Kurasu.

Producing consistently high-quality coffee under an ever-changing climate is incredibly difficult, and being able to feature this coffee four years in a row feels almost like a small miracle. A major reason this “miracle” continues is thanks to the crucial work of the local exporter. San Vicente, based in Santa Barbara, conducts drying-related research projects focused on moisture content and water activity, using their findings to provide daily guidance to producers. Because the exporter takes the lead in sharing reproducible knowledge and raising quality across the entire producing area, we are able to enjoy delicious coffee year after year.

Of course, one of the charms of coffee as an agricultural product is that its flavor shifts subtly from year to year. Rainfall, sunshine, the age of the coffee trees—countless natural factors shape the final cup. Instead of trying to completely control nature through processing or roasting, embracing and adapting to it is, in a way, a key mindset for making truly “delicious” coffee.

This year’s lot has a brighter, more vibrant expression—almost like biting into fresh stone fruit. Its characteristic nourishing sweetness and gentle, lingering finish remain, but the overall balance leans slightly more toward a floral direction. When hot, you’ll find notes reminiscent of loquat or apricot; as it cools, it develops into a soft yet aromatic profile similar to Japanese black tea.

This will be the only Honduran coffee we offer this season, so we truly hope you won’t miss the chance to enjoy it.

Factory's Note

Belarmino-san’s journey in coffee begins in his childhood.

“My father was an excellent coffee farmer long before I was born,” he recalls. From a young age, Belarmino-san learned by working alongside him—washing cherries, drying parchment, and experiencing coffee production firsthand.

At age 20, he was entrusted with a portion of his father’s land.

At 30, he planted coffee on the land he inherited and began managing his own farm in earnest.

A major turning point came seven years ago, when he purchased new land in Las Flores, Santa Barbara. He sensed great potential there and hoped to produce high-quality specialty coffee. Two years ago, his older brother Juan—already producing and selling specialty microlots—supported him generously, teaching techniques and guiding him through the process.

This year, production has been especially challenging.

Labor shortages have driven up wages, agricultural inputs are more expensive, and overall production costs have risen sharply throughout the region. Still, Belarmino-san remains forward-looking:

“I want to plant more high-quality varieties like Geisha and SL28 in the coming years.”

With that vision in mind, he continues to tend to his land—the land his family has cared for across generations—quietly, steadily, and with great dedication.

About Yamato Toujiki

Arita, one of the most prestigious pottery producing regions of Japan, has been playing a fundamental role in providing trusty products to support Japanese culinary culture for more than 400 years. Among the manufacturers we met in Arita, Yamato Toujiki is one that was flexible and open to new designs and ideas, while still embracing traditional techniques.

The craftspeople there are truly meticulous in their work, not overlooking even the slightest difference in shape and carefully finishing each piece one by one.

As we went though countless prototypes, their professional inputs such as “this thickness tends to deform after firing” or “the angle of this curve could be adjusted a little more” has given us many new perspectives to give the design we envisioned an actual shape.

The precision in the craftspeople’s work we witnessed on our visit to Arita was truly remarkable. How they used potter’s wheel so naturally like breathing, and how a beautiful shape emerges from it- the moment we saw it, we realized that we are not just making something but also passing on this culture of the art.

Another thing that stuck with us was the atmosphere of the workshop. It was quiet but full of energy at the same time, the air filled with history and a proud craftspersonship.

“You never know until it comes out of the oven” they said- that’s why they treat each and every piece with such attention and precision, making adjustment along the way as needed. In their such work ethics we saw a shared sense of pursuing the ideal with our product designing process.

Kyoto Series is a product born through the hands of such craftspeople- it would be our pleasure if you could feel the warmth of human touch and their stories as you sip.
